He cherishes his Romanian roots while being deeply influenced by the diverse gastronomic heritage of Italy. Paul’s passion lies in creating innovative dishes inspired by traditional recipes, blending different culinary traditions from around the world. With a strong focus on preserving authentic flavors and respect for nature, he continuously strives to improve his skills and knowledge in the culinary arts. He then decided to move to South Tyrol where he found his new home and lots of creativity to share in his cuisine.

Day 1 – Arrival

Welcome to Alta Badia! Ciasa Salares will be your base for this tour. Upon arrival, enjoy a delightful wine & cheese aperitif, followed by a traditional dinner with game dishes.

Day 2 – Brunico and Grappa

After breakfast, you’ll hit the road to the delightful town of Brunico in Val Pusteria. After exploring the town centre, you’ll go for leisurely lunch at Ütia de Bioch, a typical alpine hut. Back in San Cassiano, a great grappa tasting session awaits you in the hotel, while dinner will be a traditional affair in Ciasa Salares’ fascinating Cocun Wine Cellar.

Day 3 – Mount Lagazuoi and Cortina

Your destination this morning is the Falzarego pass, where you’ll hop on a cable car to the top of Mount Lagazuoi. After this visit, you’ll reach Cortina for a gourmet lunch at San Brite restaurant. In the afternoon you’ll have some free time to explore the town centre before returning to your hotel in San Cassiano for a fabulous farewell dinner.
